Skipped
Had a super big lunch this afternoon, so I will not be eating dinner. We got together with the family and went to the Border Cafe. So yummy.

Pizza
Nothing beats home made pizza. Nothing too fancy this evening, just a cheese (pictured) pizza and a pepperoni (not pictured) pizza. When the weather is more conducive, I've been known to cook it on the grill, but since it's snowing at the moment, I opted to cook it in the oven. I got the oven rip roaring hot and it did just the trick. The outside of the crust was nice and crunchy and the inside was steamy and chewy.

Sausage Peppers and Onions
Today's high was 7 degrees, 7 tiny little degrees. So I made something with a little heat to warm up the old tummy. Sausage, peppers and onions with some diced tomatoes, Italian seasoning, a little red wine and some red pepper flakes. I served it over some spaghetti and it was good. So good, I will be taking some with me to work tomorrow for lunch. So good, I am not so sure there will be leftovers tomorrow. Soooooo Goooooood.

Elizabeth's Chicken Chili
This is an awesome chicken chili that cooks up in the crock pot. I got the recipe from my sister, Elizabeth, who gets all the credit for this bowl of deliciousness. So little effort to make, so much payoff in the end. A few chicken boobs, a jar of salsa, some chili powder, cumin, garlic, peppers and diced tomatoes, all in the crock. Then after a few or more hours, shred the chicken and add some corn and beans. A couple of hours later, shazam, dinner. There are a few ways to enjoy this bowl of joy: with tortillas (pictured), with tortilla chips, over some rice or all on it's own. As with most meals in this style, the leftovers tomorrow will taste even better.

Leftovers!
In the spirit of full disclosure, I eat a lot of leftovers. There is just the two of us, and having Italian blood coursing through these veins, I like to cook in bulk. It's also nice not to have to make dinner every night. So, yes, a lot of leftovers. As this goes along I might think of something to make leftovers more fun, but for right now, this is it.

Mom's Chicken Pot Pie

Tonight I made my mom's chicken pot pie. I think a wonderful introductory meal.
To start, I didn't have a couple ingredients so I improvised a bit. In lieu of the missing celery I used a little ground celery seed and not having parsley, I used some Italian seasoning. There's parsley in that, so not a bad substitution at all. Despite this being one of my favorites growing up, it's the first time I have made it for Kirk and I. Thankfully, despite shoddy ingredient gathering, it was quite delicious. I can confidently say it is destined to become part of my dinner repertoire.
While we ate, we watched some Cooking Channel and, conveniently enough, we saw a recipe for curried chicken pot pie. A beautiful mash up of both our cultures. I will have to give that a go one day. First though, I'm pretty sure I will have to make the original a few more times, focusing on having all the ingredients, before making the leap into adventurous land.
A New Vision...
So it's been over 2 years since I updated this little patch of Internet. Glad to see not much has changed.
I've decided to take this little half hearted blog of mine and turn it into something special. Special to me at least. I'm going to start myself a little "everyday for a year" thin-a-ma-bobs. I'm going to call it: What I ate for dinner. It will have pictures maybe a recipe or two, and some (hopefully) amusing anecdotes. I am hoping that it will serve a few purposes. #1 It will give me, without a doubt, something to post about every night. #2 I will be less prone to make and eat a box of pudding for dinner. It does not happen often, but when it does, it's glorious and totally inappropriate when trying to eat right. #3 I hope that by sticking with it I will have something positive to look back on.
