Rotisserie Chicken

Kirk went to Costco on his way home and he picked up a chicken! So I made some peas and he made some rice pilaf and dinner was done. I like when dinners this tasty are so easy. I might even man up and boil down the carcass and make some soup. Though, I do get squicked out at the thought of "picking the bones" so maybe not.

Delivery!

Tonight we treated ourselves to some pizza delivery from Rizzo's. A his and hers order, we got a chicken parm calzone for me and a pizza with bacon and pepperoni for Kirk. We will be eating well for a while.

Spaghetti night! Made some sauce with sausage and peppers and just made a box of spaghetti nothing special, but quite tasty. Hopefully there will be enough leftovers for tomorrow.

Rice & Salsa

I was away this weekend, off the grid in New Hampshire, hence the lack of updates.

I pick up where I left off... tonight I am having our lazy man special: rice and salsa. Quick, easy and tastes good to boot. We had a long day on the road and we're both exausted so this was a obvious choice.

Qdoba Taco Salad

I came home from work today to find that Kirk had gone to Qdoba and got dinner. YUMMY! He got me a taco salad with chicken, salsa, sour cream, and cheese. I love taco salads for two reasons, #1 they are delicious; #2 they remind me of the old Bud Light commercial.

Baked Chicken

Tonight I had to do minimal cooking. My In-Laws sent home a fridge full of food with Kirk over the weekend, so I am set for a few days.

Tonight we had the baked barbecue chicken. I made some oven fries and green beans to go with. A well balanced meal if I do say so myself.

Kirk brought home some of his favorite fast food, Popeye's chicken, so that what we had for dinner. I made some garlic and herb rice pilaf and some crescent rolls. I meant to make some peas, but I forgot, so the plate is looking a little beige.

The Border Cafe - Empanadas

Tonight I went to dinner with Jo and Ben. We hit The Border, and we hit it hard. I had the empanadas with rice and black beans. Usually I'd get a burrito, but I was feeling adventurous tonight. I was not disappointed. Honestly though, there are very few times you go wrong with fried food. They were very filling, I only finished 2, so I'll be having the rest for lunch tomorrow. A big thank you to Jo and Ben for asking me out, it was fun!

Tuna in a Pita

Dinner and a Movie. Sandi and Steve came over bearing gifts of J&M eats and we watched Iron Man 2. I had tuna in a pita with lettuce tomato and pickles. Not exactly what I had ordered, I don't quite know they confused pickles with onions, but it tasted good all the same. The sandwich was big and messy and well worth the effort it took to eat it.

Elizabeth's Chicken Chili

Chili on a cold night. Perfect. I love chili, you can throw all but the kitchen sink in there and it will taste good. I had a pepper that was not going to make it the week, so I threw that in. So that worked out. I am so glad to have this recipe, Kirk loves it and it's easy to make, a bonus when I am having a lazy day.

Wasn't feeling so good today, but I managed to make one of Kirk's favorites. Sausage, peppers and onions. Luckily for me, it's super easy to put together, throw all the veggies and meat in and let simmer. We had it over spaghetti and it was tasty. Plenty of leftovers for lunch tomorrow

Super Bowl leftovers

So, I didn't post yesterday... I totally forgot. Between a crazy awesome birthday party and the Super Bowl I was totally scatter brained. The good news is that due to all the left overs, I am having exactly the same thing I had for dinner yesterday. Buffalo fingers and 2 slices of baked potato pizza from J&M, the best sub shop around. I also had a glass of chocolate milk.

Leftovers and Ribs

Kirk wanted to spice up the leftovers, so he made a package of ribs to go with. I am not a big fan of anything with bones, but while they were in the oven, they were smelling delicious. When they came out, I had a little nibble and thought they tasted pretty yummy. So in the spirit of giving things another go, I cut off a few and put them on my plate. Well, I had one good bite and that was about it. There was too much going on with them that was not meat. I was out. Kirk had no trouble picking up where I left off and finished my portion. So I am sticking with meat products with no bones. The leftovers on the other hand were just dandy.

Baked Macaroni with Tomato

This is a comfort food from way back. Growing up we called it pizza pasta because we thought it tasted like, well, pizza. It's super easy to make, and it's perfect for cold nights.

Par boil some elbow macaroni (or small shells) and drain. Then layer in a casserole dish with a large can of crushed tomatoes, a couple shakes of some oregano, pepper to taste and lastly, (what may be a deal breaker for some) slices of Velveeta "cheese". Bake for 30-45 minutes @ 350ยบ remove from the oven and stir to evenly distribute the cheese throughout the dish.

It might sound a little dicy with the Velveeta, but I am telling you, if you can see your way past the "cheese food product" and give this a go, you wont be sorry. The canned tomatoes cut the saltiness of the "cheese" and gives it a nice balanced flavor. And with a nickname like pizza pasta, it's an easy one for kids.

Eggs

Tonights dinner fell apart before I could start it. We were both looking forward to what was planned, but a major ingredient was missing. So with the both of us not really in the mood for anything else, I made some eggs and hash browns. The picture, I'll admit, does not look too appetizing, but I assure you, those eggs were yummy. I put some green peppers in there to keep it interesting and in Kirk's I threw in some ham as well. And you gotta love the fancy china I served it on. Not too shabby for a throw away meal.
