Rice & Salsa
I was away this weekend, off the grid in New Hampshire, hence the lack of updates.
I pick up where I left off... tonight I am having our lazy man special: rice and salsa. Quick, easy and tastes good to boot. We had a long day on the road and we're both exausted so this was a obvious choice.

It was a long week and we napped instead of eating dinner. It wasn't going to be anything special anyway, just leftovers.

Baked Macaroni with Tomato
Par boil some elbow macaroni (or small shells) and drain. Then layer in a casserole dish with a large can of crushed tomatoes, a couple shakes of some oregano, pepper to taste and lastly, (what may be a deal breaker for some) slices of Velveeta "cheese". Bake for 30-45 minutes @ 350ยบ remove from the oven and stir to evenly distribute the cheese throughout the dish.
It might sound a little dicy with the Velveeta, but I am telling you, if you can see your way past the "cheese food product" and give this a go, you wont be sorry. The canned tomatoes cut the saltiness of the "cheese" and gives it a nice balanced flavor. And with a nickname like pizza pasta, it's an easy one for kids.
